This scallion rice recipe is packed with flavor and will add flare to any dish you pair it with!
I really enjoy a side dish of rice, but I find it difficult to find flavorful rice recipes. It’s not like the rice has to have a ton of flavor, but plain rice gets boring! We use this scallion rice recipe with so many different dishes! It goes wonderfully with practically any type of saucy chicken/pork/beef recipes or stir fry’s. After you make this, you’ll consider making it every time!
This recipe is so simple, uses one pot, and boasts wonderful flavor. I can’t wait for you to give it a try!

Ingredients
- Basmati Rice (or other long grain rice)
- Garlic
- Scallions
- Light Tasting Olive Oil
- Butter
- Salt & Pepper
- Water
About This Scallion Rice Recipe
Basmati Rice
You don’t have to use Basmati rice, any long grain rice will work. I prefer cooking with Basmati because I like the texture, the way it separates, and how it stays well formed. Some long grain rice I have found to become mushy when you try to add anything besides water (or when you try to separate it).
Garlic
I highly recommend using fresh garlic for this, and not the pre-minced garlic in a jar. The garlic is one of the main stand out ingredients, you don’t want to cut corners here.
Scallions
You will need to chop the whites of the scallions. You can chop the entire scallion and separate the whites and greens, allowing you to garnish your rice or meal with the scallion greens if you would like!

Delicious Scallion Rice Recipe
Equipment
- 1 Pot with Lid
Ingredients
- 1 Tbsp Olive Oil light tasting
- 1 Cup Rice long grain, Basmati preferred
- 2 Cloves Garlic Minced
- 3 Stems Green Onions Sliced, whites separated from greens
- 1 3/4 Cups Water
- 1 Tbsp Butter
- Salt & Pepper to taste
Instructions
- Mince the cloves of garlic. Cut the green onion stems and separate the whites from the greens.
- Place a drizzle of olive oil in a pot with a lid (about 1 tbsp). Heat the olive oil, then add the minced garlic and the whites of the green onions.
- Cook on medium heat for about 1 minute. Don't overcook the garlic, it should not become brown. Add the rice and stir to coat, cooking the rice for about 1 more minute.
- Pour in the water (water amounts should be determined by rice package directions). Heat on medium/high heat until the water boils. Place a lid on the pot, reduce heat to low. Cook for about 15-20 minutes, or until the water is absorbed and rice is cooked through.
- Allow the pan to sit, with the lid on, for at least 5 minutes.
- After the rice has sat, add 1 Tbsp of butter, and salt & pepper to taste. Mix together with a fork, separating the rice while mixing together.
- Serve immediately.
