This isn’t meant to provide extravagant recipes, the point is to provide ideas for dinner to your and your family. Also, to share your ideas with everyone else. Corn Casserole
If you haven’t heard of corn casserole, you should really try it out. It’s one of my favorite sides to go with chili. I have never been a big fan of corn bread until I had this. Corn casserole is like cornbread, but it’s not dry and crumbly. I use this cornbread with creamed corn recipe, but I put it in a 9×13 instead of a 9×9 and bake it the same amount of time. I don’t want mine to be gooey, I want it to be firm.

Kielbasa, Potato & Pepper Bake
Cut up one package of kielbasa, 3-4 potatoes, 1 onion, and some bell peppers or mini sweet peppers. Put everything into a 9×13 pan, sprinkle with 1 packet of zesty Italian seasoning. Cut up 1 stick of butter into slabs, and place on top of the ingredients in the 9×13 pan. Cover with foil and bake at 425°F for about 1 hour, or until potatoes are fork tender. This part is optional, but I remove the foil and broil until the top is browned. Serve immediately.

I use this Chicken Broccoli Rice Casserole recipe from the Cozy Cook, but will be substituting the fresh broccoli for thawed frozen broccoli instead.

Creamy Parmesan Chicken & Rice
I tried this recipe out for the first time at the beginning of the month. It was so good compared to my expectations. This is going to be a staple meal for our household. Super easy, and super good!
