Meal Plan Monday Recipes/Products

Breakfast Sandwiches

We will be making bacon, egg and cheese sandwiches on english muffins. This is such a simple and quick dinner option, or breakfast option. We really enjoy having breakfast for dinner.

Naan Pizzas

This is such an easy 20 minute dinner idea! Use pre-baked naan bread. We prefer the original Stone Fire Naan bread. Use your preferred toppings for your pizzas, lay down the sauce, toppings, cheese and bake them. Bake your pizzas at 425°F for about 5 minutes or until the cheese is melted and bubbled.

Shrimp Scampi

We will be having this Shrimp Scampi recipe, but will be serving it with angel hair pasta. We will also be adding some heavy whipping cream to the dish to create a creamy shrimp pasta meal.

Find the Shrimp Scampi recipe here!

Pan Seared Garlic Toast

Use sliced deli baked bread for this, or some type of higher end bread. I found a sliced everything sourdough loaf at Aldi that is perfect for this toast!

Brush each side of the bread slice with olive oil and sprinkle with a dash of garlic powder. Sear each side of the bread in a pan over medium heat, until golden browned. This usually takes about 2 minutes per side if the pan doesn’t get too hot.

Creamy Parmesan Chicken & Rice

I tried this recipe out for the first time at the beginning of the month. It was so good compared to my expectations. This is going to be a staple meal for our household. Super easy, and super good!

Roasted Broccoli

Place your broccoli in a ziploc bag with olive oil, fresh ground salt, fresh cracked pepper and some garlic powder. Shake well to coat evenly and then spread the broccoli onto a large sheet pan sprayed with olive oil cooking spray. Bake at 425°F for about 20 minutes (depending on broccoli sizes).

Grilled Chicken Sandwiches

Marinated chicken breast, grilled, then placed on ciabatta bread with lettuce, tomato, provolone, bacon and mayonnaise.

Marinade: 1/4 cup white wine vinegar or apple cider vinegar, 2 TBSP olive oil, juice from 1/2 lemon, 1 packet zesty Italian seasoning. You can also add about 2 TBSP of mayonnaise if you would like, it helps the marinade coat the chicken and keep the juices in on the grill.
