This isn’t meant to provide extravagant recipes, the point is to provide ideas for dinner to your and your family. Also, to share your ideas with everyone else. Spaghetti

Find Mom’s Easy Cheater Spaghetti recipe here! If you want to make it extra special, instead of a meat marinara sauce, you can make Dad’s Famous Homemade Meatballs to go with it.

Toasted Garlic Ciabatta Bread

We have some left over ciabatta bread from last week, and I plan to use it up for garlic bread with our spaghetti. This toasted garlic ciabatta bread is so much better than the frozen garlic bread alternative, and it’s easy to make!

  • 2 ciabatta rolls halved
  • 2 cloves garlic
  • 2 TBSP butter
  • 2 tsp olive oil
  • Salt & Pepper to taste

Put the garlic, butter, olive oil, and salt & pepper in a small microwave safe bowl. Microwave until the butter is melted and garlic is fragrant (about 30-45 seconds).

Brush the cut sides of the ciabatta rolls with the garlic butter mixture. Bake at 450°F for about 3-5 minutes with the cut & buttered side up. Slice into triangles and serve immediately.

Slow Cooker Chicken Tacos

These slow cooker ranch salsa chicken tacos are super easy for a weeknight meal.

  • 2 chicken breasts
  • 16 oz fresh salsa
  • 1 packet ranch seasoning
  • 1 packet taco seasoning

Place chicken breasts in the slow cooker. Sprinkle with both seasoning packets. Pour salsa on top and cook on low for about 6 hours. Shred the chicken and return to the juices in the crock pot, mix it all together, and serve on taco shells with your desired toppings.

Slow Cooker Cheesy Chicken Spaghetti

This is another super simple week night meal. We have weight in’s for state championships on Thursday, so I needed something simple that could be made while we are away.

  • 2 chicken breasts
  • 1/2 tsp salt & pepper each
  • 1 tsp onion powder & paprika each
  • 2 cans cream of chicken soup
  • 1 can rotel (my kids prefer mild)
  • 1 TBSP minced garlic
  • 2 C. shredded colby jack
  • 1/4 C. sour cream
  • 16 oz spaghetti

Put your chicken breasts in the slow cooker. Season with salt, pepper, onion powder and paprika. Add cream of chicken, rotel and garlic. Mix the ingredients together over top of the chicken breasts. Cook on low for about 6 hours. Remove the chicken, chop into bite size pieces, and return to the mixture in the slow cooker. Cook the spaghetti noodles according to package directions. In the meantime, add the shredded cheese and sour cream to the slow cooker, and stir to combine. Add the cooked spaghetti noodles into the mixture and stir to combine (easily stirred with tongs). Serve immediately.
