Meal Plan Monday Recipes/Products

Chili Cheese Dogs

My son loves chili cheese dogs, but it has to be a certain chili recipe. I found the below chili dog sauce that my whole family absolutely loves, by South Your Mouth. The best part is, you can freeze it and use it later for a really quick week night meal.

We use beef franks, chopped Vidalia onion, shredded cheddar cheese, sweet & spicy pickles and Fresh Gourmet Crispy Onions for toppings. Other great options are sliced tomatoes, caramelized onion, sport peppers, relish, sour cream, or pepper jack cheese.

BBQ Chicken Grilled Cheese

This says BBQ chicken grilled cheese, but this can really be any type of gourmet grilled cheese. You can mix up the ingredients that go on it as well! You can use pre-cooked chicken, or you can grill/pan fry your own and cut it up. Place it on a nice hearty bread and add your toppings. Then grill it like a regular grilled cheese (maybe lower the heat and up the time to make sure it cooks through, depending on topping amounts).

Topping ideas:

These are just some ideas. It may sound weird, but these turn out delicious.

Roasted Vegetables

Roasted vegetables is one of my families favorites. The flavor it brings out is amazing! For our roasted broccoli or carrots just toss them in a bag or bowl with some olive oil and fresh cracked pepper and Himalayan salt. Add some garlic powder to the broccoli, it turns out really good that way. Roast on a sprayed non stick sheet pan at 425° for about 20-25 minutes.

Cheeseburger Pie

Cheeseburger pie is a very quick and easy week night meal that you can make into whatever you would like, pretty easily. This is a Betty Crocker recipe that uses Bisquick. The idea is that you can serve this like a cheeseburger, you can add lettuce, tomato, onion or pickles to the top after it cools. Serve it with ketchup and mustard. I add salt, pepper, garlic powder and chopped onion to the recipe. You could also mix it up and add taco seasoning, bell pepper and black beans for a southwest casserole. The possibilities with this one are pretty endless if you get creative.

Butter Chicken

Usually when we make butter chicken we use Patak’s Butter Chicken simmer sauce. It’s very good, and the flavor is great. We usually add onion to ours as well. This time one of my co-workers recommended this crock pot butter chicken recipe, so we are going to give it a try! I am excited to see how it turns out, she said it was very good.

I also highly suggest making your own naan bread, if you have time, of course!

Creamy Corn Chowder

This creamy corn chowder by salt & lavender is another new recipe I am going to try. It just sounds fantastic. I will let you all know how it turns out.

Breakfast Casserole

I really enjoy a good breakfast casserole. I enjoy using egg, hash browns, bacon, sausage, bell peppers, onion, garlic, and green onion. Chopped tomato is also a great addition, but it can produce a little to much liquid. I’ll have to post a recipe for this soon, it just seems that there are already so many breakfast casserole recipes out there!

Pumpkin Bread French Toast

I plan on making pumpkin bread this week, but it makes 3 loaves. We won’t be able to eat them all, so I am going to make pumpkin bread french toast with one of the loaves. Recipe to come soon!
