This isn’t meant to provide extravagant recipes, the point is to provide ideas for dinner to your and your family. Also, to share your ideas with everyone else. Honey Soy Chicken Sausage & Sweet Potato Hash

Honey and soy sauce make a perfectly sweet and salty glaze for this chicken sausage, sweet potato, pepper and onion hash.

BLT’s and Tater Tots

Bacon, lettuce and tomato sandwiches on toast with mayonnaise. I really like using the hearty white bread by Pepperidge Farms. Also, I have been getting 3 packs of bacon from Sam’s Club, I’ve found it to be quite cost effective.

Stuffed French Toast

This strawberry stuffed french toast is absolutely amazing! This is a must try recipe! I will create an online recipe soon, but for the meantime, please see the recipe card below.

Chorizo, Spinach & Bean Soup

Chorizo, diced tomatoes, onion, italian seasoning, great northern beans and spinach make this wonderful soup. My favorite part about it is having a crusty roll to dip in it. I really like the Rhode’s frozen sourdough rolls (heat & serve).

1 lb chorizo, 28 oz petite diced tomatoes, 1 onion, 1 can great northern beans (drained & rinsed), 6 cups chicken broth, 1 tbsp italian seasoning, 3 cups rough chopped spinach, 2 cups cooked ditalini.

Cook the chorizo and onion. Add in the tomatoes and 1 tbsp italian seasoning. Stir to combine and heat through. Add beans and chicken broth. Bring to a boil and cook for 15-20 minutes. Reduce the heat, add the spinach & ditalini, and allow to cook for 5 more minutes.

  1. We’re having BLT’s Wednesday too! I’m serving ours with chips though since my son and I need to eat early and head to his school for a mandatory sports meeting that will start just about the time my husband and older son are getting home from work.
