Preheat the oven to 350°F and spray a 9x13 pan with cooking spray.
Make the taco meat according the the recipe in my post above (or to package directions if you are using a taco seasoning packet).
Once the taco meat has been completed, lay 3 tortillas in the bottom of your prepped 9x13 pan, overlapping just enough to cover the bottom of the pan.
Spread half of the taco meat overtop of the tortillas and cover with 1/3 of the shredded cheddar. Place 3 more tortillas on top of the taco meat/cheese mixture.
Spread the remaining half of the taco meat overtop of the new layer of tortillas. Cover with 1/3 of the shredded cheddar and top with 3 more tortillas. Use the remaining cheese to cover the top of the last layer of tortillas.
Place in the oven and bake for about 15 minutes, or until the cheese on top has melted and starts to bubble.
Remove from the oven, cut into squares, and serve immediately with your desired toppings. Imaged: we used lettuce, tomato, salsa, sour cream and taco sauce. A list of suggested toppings is in the post above.
