Easy Mexican Street Corn

We are always looking for great sides to go with our fajitas or taco nights, and one of our go-to favorites is this simple and easy Mexican street corn. This gives you the great flavor of street corn in a simple to make, and easy to eat recipe that works great for week night meals!


The ingredients needed are super simple:

  • A can of corn (we use fire roasted canned corn)
  • Sugar
  • Mayo (DO NOT use miracle whip)
  • Sour cream
  • Sriracha
  • Cotija cheese or queso fresco
  • Cilantro
  • Lime
  • Chili powder
  • Garlic powder
  • Salt & pepper


You want to start by cooking the corn. Canned corn is already cooked, but it will need to be warmed up, and you can’t skip the step of cooking this corn in the sugar. The recipe just wouldn’t be the same!!

Put your can of corn in a small pot, cover about half way with water or a little more, and then add a tablespoon of sugar to the water. Mix it around to dissolve the sugar and start to heat up the corn. Heating the corn shouldn’t take long, bring the water to a boil and let it go about 3 minutes after boiling. There’s not an exact time to this process, just cook it until it’s warmed and the sugar has a chance to soak into the corn.


Once your corn is cooked, drain it entirely and let is cool ever so slightly!

Add in the base sauce ingredients:

  • Mayo
  • Sour cream
  • Sriracha
  • Garlic powder
  • Salt & pepper

These ingredients can be adjusted to taste, or how saucy you want your street corn to be!

Mix this all together (I do this step in the same pan… because who likes dishes?!?!)


Scoop the corn mixture into your servings. I typically use a bowl so I can keep all my yummy toppings right on top of the corn, but you can serve this however you’d like. The key is to not add the toppings until it’s in the individual service.

Add toppings to your individual servings:

  • Chili powder (we like to use the chipotle chili powder for some smoky flavor)
  • Cotija cheese or queso fresco
  • Cilantro
  • Lime

Don’t skimp on the toppings guys, you truly need these flavor combinations added to make this so amazingly good!

Easy Mexican Street Corn

This easy and delicious recipe is the perfect side to your fajitas or tacos. It quick and simple enough to go with the most hectic schedules, and works great for those weeknight dinners! Lots of flavor contrasts and a great addition to your meal.

Ingredients
  

Corn

  • 1 Can Corn We use fire roasted corn
  • 1 TBSP Sugar

Sauce

  • 1/3 Cup Mayo Do not substitute with miracle whip
  • 1/3 Cup Sour Cream
  • 1/2 tsp Sriracha
  • 1/4 tsp Garlic Powder
  • Salt & Pepper To taste

Toppings

  • 1/2 Cup Cotija Cheese Crumbled
  • 1 Group Cilantro Chopped
  • 1 Lime Cut in wedges
  • 2 Dashes Chili Powder To taste

Instructions
 

  • Prep all your topping ingredients. Crumble your cotija cheese, chop your cilantro, cut your lime into wedges.
  • Drain your can of corn and add it to a pot. Fill the pot with water to cover the corn about half way or a little more. Add in the sugar and stir to dissolve. Bring the corn to a boil and continue to cook for about 3 more minutes.
  • Once the corn has finished cooking, drain the pot entirely and allow the corn and pot to cool slightly. (You can also put it in a bowl, but I prefer less dishes)
  • Once slightly cooled, add in mayo, sour cream, sriracha, garlic powder and salt and pepper. Mix all ingredients together to combine well.
  • Dish the corn into individual servings and add your toppings.
  • Don't skip out on the toppings, as these add the wonderful flavor contrasts and textures. Be sure to squeeze your lime wedge over top of the corn. I usually start with the chili powder dashes, add the cheese, add the cilantro, and top with the lime wedge. All toppings can be added to taste.
