These quick and easy chorizo and egg breakfast burritos are so good, they will leave you wanting more and more!


Warning: you might get way overstuffed eating way too many of these breakfast burritos. I know I did. These chorizo and egg breakfast burritos recipe is super quick and easy to make, and have such great flavor for the few ingredients that go in them. This is perfect for breakfast, but also great for a “breakfast for dinner” kind of night.

With just a few ingredients, these are easy to whip up with what you have on hand (assuming you have chorizo and eggs of course). The best thing about these, it’s kind of like a scramble, so you can add whatever you would like to them. We just kept them simple, because the flavor from the chorizo is absolutely wonderful!

How to Make Chorizo and Egg Breakfast Burritos

These chorizo and egg breakfast burritos are super simple to make. They are great for a quick breakfast, or a quick dinner when you don’t have time or plans!

Step 1

Dice your onion and red pepper (or poblano pepper). Make sure to remove the seeds and insides of the pepper. If you use poblano peppers and want a little more heat, you can keep some of the seeds to throw in with the scramble.

Step 2

Crack your eggs into a bowl and mix them together so they are ready to pour into your pan. Add you salt, pepper, and garlic powder to the egg mixture and stir to combine. If you wish to add some other spices, paprika, red pepper flakes, chili powder, or onion powder would be good additions, but I found these to be wonderful with simple spices. The chorizo already has a lot of flavor to it.

Step 3

Put a small drizzle of oil or butter in a pan, heat it up, and then add your chorizo, onion, and pepper to the pan. Cook the chorizo on medium/high heat until cooked through. This should take about 6-9 minutes. Do not drain the grease/oil.

Step 4

Add the eggs into the pan with the chorizo. Cook chorizo, onion, pepper and eggs in the pan together on medium-low heat, stirring every 15-20 seconds until the eggs have thickened and there is no visible liquid left. This can take between 5 – 10 minutes.

Step 5

Add a sprinkle of shredded cheese (you can use any kind by colby jack, pepper jack or sharp cheddar are great for this recipe) into your flour tortilla. You can make these whatever size you like, you will just get more out of smaller tortillas. We use 8″ tortillas and they work great. Add some of your egg mixture on top of the shredded cheese, probably about a 1/4 cup or a little more making an oblong shape. Fold the edges of the tortilla in on the sides where the egg reaches the furthest. Once your ends are folded over, take one side of your tortilla and roll it over the egg mixture. Continue rolling until you’ve rolled it into a burrito. Keep it sitting on the seam of the tortilla to keep it from unrolling.

Step 6

Use a small frying pan, heat it on medium-high heat, and spray it with spray olive or vegetable oil. Place your burrito seam side down inside the pan, allow it to brown for about 1-2 minutes and then flip to repeat on the other side.
