Meal Plan Monday Recipes/Products
Ranch Baked Chicken Thighs
Use boneless, skinless chicken thighs (or bone in skin on and increase the bake time by about 10 minutes). Season with fresh ground salt, fresh ground pepper, and garlic powder. Coat each side with ranch dressing and bake at 425°F for about 15 minutes.
Roasted Broccoli
Place your broccoli in a ziploc bag with olive oil, fresh ground salt, fresh cracked pepper and some garlic powder. Shake well to coat evenly and then spread the broccoli onto a large sheet pan sprayed with olive oil cooking spray. Bake at 425°F for about 20 minutes (depending on broccoli sizes).

Cheeseburger Pie
Cheeseburger pie is a very quick and easy week night meal that you can make into whatever you would like, pretty easily. This is a Betty Crocker recipe that uses Bisquick. The idea is that you can serve this like a cheeseburger, you can add lettuce, tomato, onion or pickles to the top after it cools. Serve it with ketchup and mustard. I add salt, pepper, garlic powder and chopped onion to the recipe. You could also mix it up and add taco seasoning, bell pepper and black beans for a southwest casserole. The possibilities with this one are pretty endless if you get creative.

Scalloped Potatoes
Layer potato slices in an oven and stove top safe pan, such as a Dutch oven or cast iron. Salt and pepper each layer to taste. Pour heavy cream over the potatoes until they are a little over half covered. Fill to the top of the potatoes with half & half. Bring to a simmer on the stove top, it takes about 20 minutes. Add a stick of butter on top, cook in the oven at 350°F for about 45 minutes or until fork tender in the middle.
