This isn’t meant to provide extravagant recipes, the point is to provide ideas for dinner to your and your family. Also, to share your ideas with everyone else. Meal Plan Monday Recipes/Products

Garlic, herb & wine pork chops

We use center cut pork chops on the grill for this one, with McCormick Grill Mates Garlic, Herb & Wine Marinade Mix.

Tortellini Pasta

One of my families favorite side dishes is this tortellini pasta with spinach, mushrooms and caramelized onions.

I use Rana 5 cheese tortellini, and I do quick caramelized onions. I will have to do a recipe for the onions, but in short, you sauté in olive oil with some salt and pepper until they start to brown. Sprinkle in about 1 Tbsp of sugar and then add 1/4 C water. Continue to simmer/sauté until the water evaporates.

Walking Tacos

Walking tacos are a very quick and easy meal for weeknights, and kids find them so fun! We use small snack sized bags of Doritos (you can also use Fritos). Make your preferred taco meat. Crush the chips inside the bag, add in your taco meat, cheese and desired toppings.

Suggested toppings:

  • Shredded cheese
  • Nacho cheese
  • Queso
  • Lettuce
  • Tomato
  • Onion
  • Black olives
  • Pickled jalapeno
  • Sour cream
  • Taco sauce
  • Salsa

We are going to give this rice a try this week: Old El Paso, Cheesy Mexican Rice.

Roasted Vegetables

Roasted vegetables is one of my families favorites. The flavor it brings out is amazing! For our roasted broccoli or carrots just toss them in a bag or bowl with some olive oil and fresh cracked pepper and Himalayan salt. Add some garlic powder to the broccoli, it turns out really good that way. Roast on a sprayed non stick sheet pan at 425° for about 20-25 minutes.

We do our potato wedges the same way, cut wedge from yukon gold potatoes. Toss in olive oil, salt and pepper and roast at 425° for 25 minutes.

Bourbon Brown Sugar Pork Chops

We use center cut pork chops on the grill for this one, with McCormick Grill Mates Brown Sugar Bourbon Marinade.

Baked BBQ Chicken

Use thin cut chicken breasts (or cut larger breasts in half lengthwise). Brush with mayonnaise on each side and sprinkle with salt, pepper and garlic powder. Bake at 425° for about 15 minutes. Brush your preferred BBQ sauce on the chick, we really like this Kinders Honey Hot BBQ. Broil for about 5 minutes to caramelize the BBQ sauce.

Roasted Onion Potatoes

Chop up yukon gold potatoes. Toss in 1/4 C olive oil and 1 packet of Lipton Onion Soup Mix. Place them in a sprayed 9×13 pan and roast at 425° for about 25 minutes.

  1. It sounds like a yummy week! We have tacos on our menu this week too and I should see if my boys would prefer those walking tacos; they sound fun.

    1. You should! It’s so much more fun, for some reason… Also, I love that you can just put everything right into a chip bag. It’s so convenient!
