Meal Plan Monday Recipes/Products
Spaghetti and Meatballs
I will need to post my homemade meatball recipe soon. The spaghetti sauce for this meal will be the same as my quick and easy cheater spaghetti recipe.
Pan Seared Garlic Toast
Use sliced deli baked bread for this, or some type of higher end bread. I found a sliced everything sourdough loaf at Aldi that is perfect for this toast!
Brush each side of the bread slice with olive oil and sprinkle with a dash of garlic powder. Sear each side of the bread in a pan over medium heat, until golden browned. This usually takes about 2 minutes per side if the pan doesn’t get too hot.
Lemon Pepper Chicken Penne
This is a new recipe for us. It was shared by my husbands coworker, so we will need to try it out and check with him before posting any recipes.
Baked BBQ Chicken
Use thin cut chicken breasts (or cut larger breasts in half lengthwise). Brush with mayonnaise on each side and sprinkle with salt, pepper and garlic powder. Bake at 425° for about 15 minutes. Brush your preferred BBQ sauce on the chick, we really like this Kinders Honey Hot BBQ. Broil for about 5 minutes to caramelize the BBQ sauce.
Green Beans with Bacon
If you haven’t already, you should really try out my recipe for green beans with bacon, it so good!
Grilled Greek Chicken Kabobs
These Greek chicken kabobs will use the same marinade as my Greek chicken pitas. This marinade is the bomb, be sure to try it out! The chicken comes out so tender and juicy.
Grilled Vegetable Kabobs
Use your favorite vegetables to grill or roast. Slice them into chunks and put them in a ziplock bag with olive oil and Weber Roasted Garlic and Herb Seasoning.
Place your vegetables on skewers and grill over direct heat. Timing will depend on the types of vegetables used.
Vegetable ideas:
- Bell peppers
- Zucchini
- Summer squash
- Onion
- Mushrooms
- Cherry tomatoes
- Brussel sprouts
- Corn cob cutlets
- Little potatoes
Lemon Rice
I will be trying out this Greek Lemon Rice recipe from Buns In My Oven.

Roasted Vegetables
Roasted vegetables is one of my families favorites. The flavor it brings out is amazing! For our roasted broccoli or carrots just toss them in a bag or bowl with some olive oil and fresh cracked pepper and Himalayan salt. Add some garlic powder to the broccoli, it turns out really good that way. Roast on a sprayed non stick sheet pan at 425° for about 20-25 minutes.
We do our potato wedges the same way, cut wedge from yukon gold potatoes. Toss in olive oil, salt and pepper and roast at 425° for 25 minutes.

The roasted garlic mash sounds really nice. Will have to make myself some of that.
It’s very good! It’s super simple, we usually stick a few cloves are garlic in tinfoil with olive oil, salt and pepper and roast it in the oven for about 10 minutes. Then you can mash it up in the mashed potatoes!
I am a total menu planning advocate. The weeks I do it and grocery shop on Mondays go so much smoother. Thanks for the great recipe ideas and sharing at the Home Imagined link party. XO- MaryJo
Yes, I have too found that menu planning is a must! I grocery shop on Mondays as well, or Fridays if I get a chance. I hope you will continue to visit, I post my meal plans each Monday. I am trying to get the recipes created for my meals, but they will come in time. 🙂
I need to meal plan, I know it would make it so much easier instead of wondering what’s for supper every evening. Thanks so much for linking up at the #UnlimitedLinkParty 138. Pinned.
It took me a long time to convince myself that I need to meal plan, but it’s been so helpful!
