Once you try this taco meat recipe, you won’t make it another way!
You would think that all taco meats (especially ground beef) would be pretty comparable. That is not true when it comes to this easy taco meat recipe. This is my families favorite way to have taco meat, and the best part, no pre-made taco packets are used!
I actually created this recipe when I was trying to create my enchilada recipe. I decided, it’s so good in the enchiladas, it would have to be good in tacos too… right?!? Well, I was right. Is this authentic Mexican food? Probably not… but it’s dang good! You can substitute this for any recipe that calls for ground beef taco meat.

About This Quick and Easy Taco Meat Recipe
Ground Beef
I would suggest using a lean ground beef for this recipe, although it’s not necessary. You get more yield with a more lean ground beef, and less work draining the grease. Typically, when I drain the grease, I push the ground beef to one side of the pan, tip it up slightly to allow the grease to drain to the empty side of the pan, and soak it up with paper towel. This way I don’t clog my drains with grease.
Onion
We prefer to use Vidalia onion for this recipe, although yellow or white onion would be suitable as well.
Simple and Easy Taco Seasoning
Diced Green Chilis
We use a 4 oz can of diced green chiles, drained. We prefer mild for the kids.
Refried Beans
I definitely have a preference to refried beans. My favorite brand is Rosarita traditional refried beans. We use the remaining refried beans to serve on the side, we just heat them up and add some cheese on top.

The Best Quick and Easy Taco Meat Recipe
Equipment
- 1 Frying Pan
Ingredients
- 1 lb Ground Beef 90/10 preferred but not necessary
- 1 Onion Diced, Vidalia preferred
- 1 Quick and Easy Taco Seasoning Recipe recipe link above
- 4 oz Diced Green Chiles drained
- 1/3 Cup Refried Beans
Instructions
- Add ground beef and diced onion to a large frying pan. Cook the ground beef on medium-high heat, breaking into chunks until cooked through. This will take about 5-7 minutes. Drain the grease from the ground beef.
- Add the taco seasoning and water from the taco seasoning recipe to your ground beef mixture. Heat, stirring constantly, until well combined and the water evaporates.
- Add in the diced green chiles and the refried beans to the ground beef mixture. Heat and stir on medium-high heat until fully combined and heated through. This will take about 3-5 minutes.
- Turn off the heat and serve immediately, while warm.
