Instructions
Preheat oven to 350°. Prepare mini muffin pans (or loaf pan if making bread instead of muffins) with nonstick cooking spray.
Peel and place the bananas in a medium/large mixing bowl. Use the potato hand masher to mash the bananas well.
Add in the melted butter, sugar, egg and vanilla to the bowl with the banana. Stir well to combine these ingredients.
Add in the baking powder, baking soda, cinnamon and salt to the bowl. Stir well to combine.
Add in the flour and stir until just combined. Do not over stir the mixture.
Use a spoon to transfer the batter into the mini muffin pans, filling about 3/4 of the way full. If you are making a loaf with this recipe, pour all the batter into a 8.5 x 4.5 loaf pan.
Bake the mini muffins on the middle rack for about 15 - 18 minutes.
Bake the loaf pan on the middle rack for about 50-60 minutes.
Remove from the oven and let cool before trying to remove. If the muffins are hard to remove, let them cool longer, and give them a little twist to pop them out.
