Easy Banana Mini Muffins Recipe | Great Snack Idea

These wonderfully easy banana mini muffins are the deliciousness of banana bread wrapped into the perfect bite size snack.


Why easy banana mini muffins, do you ask? I have really been struggling to find some school snacks for my son this year. His school has chosen to become tree nut free, and that can make things a little bit complicated for finding snacks he will actually eat. I have been leaning a lot towards fresh fruits, as he can be very picky when it comes to pantry snacks. The bananas that I have bought for snacks keep getting forgotten, or other fruits and snacks are being chosen over the bananas. Bad news… the bananas keep getting way overripe. Good news… I can use them to make banana bread (which my whole family enjoys).

After I made the first loaf of banana bread, an idea occurred to me. These would be the perfect tree nut free snack that my son would actually be excited to bring. What a wonderful treat for a school snack every once in a while! So, for the next batch, I decided to make these into mini muffins instead of a loaf of bread. They turned out fantastic!!!

About Easy Banana Mini Muffins

Bananas – you will want to use bananas that are ripe. Overripe bananas will give you the best sweetness and flavor in this recipe. Additionally, this gives you an excuse to make some delicious baked goods when you have some bananas that are just too far past their prime.

Butter – you will truly want to use real butter for this recipe. You can use salted or unsalted, it won’t make too much of a difference in this recipe. Margarine is not going to provide the moisture and richness that makes this recipe so good. You will want to use this butter melted instead of softened. This will make the consistency you are looking for prior to adding the dry ingredients to your mixture.

Vanilla Extract – I highly suggest that this you use pure vanilla extract in this recipe (well essentially in every recipe). You can use the artificial, but I personally believe that real vanilla extract adds much more flavor and depth to any dish.

You can use this recipe for a loaf pan, or for mini muffins. If you choose to create this in a loaf pan, you can use a 8.5 x 4.5 pan for baking.

Easy Banana Mini Muffins Recipe

Equipment

  • 1 mini muffin pan can use more than one to bake all at once
  • 1 Bowl
  • 1 potato hand masher

Ingredients
  

  • 2-3 Ripe Bananas overripe is best
  • 1/3 cup Butter melted
  • 3/4 cup Sugar
  • 1 Egg
  • 1 tsp Vanilla Extract pure is preferred
  • 1 tsp Baking powder
  • 1 tsp Baking soda
  • 1/4 tsp Cinnamon
  • 1/8 tsp Salt
  • 1 1/2 cups Flour
  • 1 cup chopped walnuts amounts as desired, no more than 1 cup THIS IS OPTIONAL!!

Instructions
 

  • Preheat oven to 350°. Prepare mini muffin pans (or loaf pan if making bread instead of muffins) with nonstick cooking spray.
  • Peel and place the bananas in a medium/large mixing bowl. Use the potato hand masher to mash the bananas well.
  • Add in the melted butter, sugar, egg and vanilla to the bowl with the banana. Stir well to combine these ingredients.
  • Add in the baking powder, baking soda, cinnamon and salt to the bowl. Stir well to combine.
  • Add in the flour and stir until just combined. Do not over stir the mixture.
  • Use a spoon to transfer the batter into the mini muffin pans, filling about 3/4 of the way full. If you are making a loaf with this recipe, pour all the batter into a 8.5 x 4.5 loaf pan.
  • Bake the mini muffins on the middle rack for about 15 – 18 minutes.
  • Bake the loaf pan on the middle rack for about 50-60 minutes.
  • Remove from the oven and let cool before trying to remove. If the muffins are hard to remove, let them cool longer, and give them a little twist to pop them out.
