Take the guess work and stress out of the never ending question “WHAT’S FOR DINNER?”. Each week you will find my weekly meal plan Monday. This isn’t meant to provide extravagant recipes, the point is to provide ideas for dinner to your and your family. Also, to share your ideas with everyone else. Add in your meal ideas or recipes to the comments!

Meal Plan Monday Recipes/Products

Chicken Fajitas

We will be making my kid approved chicken fajita recipe. My son always seems to enjoy this one!

Mexican Street Corn

Street corn is always a really quick and easy side dish to throw together. Check out my Easy Mexican Street Corn recipe.

Ribs

We will be smoking the ribs on my pellet smoker. I haven’t done a recipe for this yet, but we coat our ribs in yellow mustard (I know it sounds weird, but the acidity breaks down the fibers and tendons in the ribs). I season all over with salt, pepper, and garlic powder. Smoke your ribs for 2 hours on 225°F. Remove them from the smoker, place them in aluminum foil, pour 1 cup of apple juice on top. Seal the aluminum foil and then smoke for another 2 hours on 250°F. Coat with your favorite BBQ (we use Lillie’s Q Gold BBQ, it’s my favorite and the best Carolina Gold sauce I have found), and sear over an open flame.

Note: you have to remove the membrane, it’s key in good ribs!

Roasted Broccoli

Place your broccoli in a ziploc bag with olive oil, fresh ground salt, fresh cracked pepper and some garlic powder. Shake well to coat evenly and then spread the broccoli onto a large sheet pan sprayed with olive oil cooking spray. Bake at 425°F for about 20 minutes (depending on broccoli sizes).

Green Beans

If you have tried my Southern Green Beans with Bacon recipe, I strongly urge you to give them a try. They are so good!

Spaghetti and Meatballs

We will be using my two recipes, Mom’s Cheater Spaghetti and Dad’s Famous Meatballs. This is the best combination!

I still need to create recipes for the remaining items. I am slowly working on getting these all imaged and typed out, stay tuned if they sound good!

  1. We have spaghetti and our 3 meat sauce on the menu for the weekend (we put meatballs, chunks of pepperoni, and some sweet Italian sausage in the sauce and let it cook all day long). And tonight we’re having pulled pork sandwiches with chips… my husband usually smokes two pork butts at once and we freeze the leftovers all pulled and ready to eat for easy and quick mid-week meals.
